Made from the Ruby cocoa bean, it offers a totally new taste experience. Not bitter, or milky, or sweet, but a tension between berry-fruitiness and luscious smoothness. And yet, no berries, berry flavour, or colour is added to the finished product. The Ruby bean is unique because the fresh berry-fruitiness and colour are naturally present. The cocoa beans are sourced from different regions of the world. The bean has a specific set of attributes, which Barry Callebaut managed to unlock through an innovative process that took years to refine.<\/p>\n
We\u2019re thrilled that Callebaut Fine Belgian Chocolate have chosen the smooth Festival of Chocolate to give you your first taste of RB1, a ruby chocolate variety dedicated to chocolatiers and pastry chefs, launching the line with Australia\u2019s Queen of Chocolate, Kirsten Tibballs from Savour School in Melbourne, in The Callebaut Test Kitchen, proudly built & designed by Knebel Kitchens.<\/p>\n

You can also get a taste of the newest chocolate variety at the smooth Festival of Chocolate, from Josophan\u2019s Fine Chocolate, helmed by Callebaut Hero, Jodie Van Der Velden. Van Der Velden\u2019s truly spectacular chocolate store Josophan\u2019s Fine Chocolates, is nestled in the historic village of Leura in the Blue Mountains, but you don\u2019t need to go that far to get your first taste of Callebaut\u2019s Ruby RB1 Chocolate \u2013 she\u2019ll be selling everything from tasting squares, to bars, blocks and slabs, mingled with flavours like macadamia, berry, honeycomb and pistachio.
