{"id":42033,"date":"2020-09-30T08:03:17","date_gmt":"2020-09-29T22:03:17","guid":{"rendered":"https:\/\/cms.smooth.com.au\/?p=42033"},"modified":"2020-09-30T08:16:59","modified_gmt":"2020-09-29T22:16:59","slug":"recipe-thai-green-curry-with-spring-vegetables","status":"publish","type":"post","link":"https:\/\/cms.smooth.com.au\/lifestyle\/recipes\/recipe-thai-green-curry-with-spring-vegetables\/","title":{"rendered":"RECIPE: Thai Green Curry With Spring Vegetables"},"content":{"rendered":"\n<p>It\u2019s World Vegetarian Day Tomorrow and <em>The More Music Breakfast Show with Mike Perso and Jennifer Hansen <\/em>thought they\u2019d kick-start the celebrations with a tasty recipe from <a href=\"https:\/\/cookieandkate.com\/thai-green-curry-with-spring-vegetables\/\">Cookie + Kate.<\/a><\/p>\n\n\n\n<p>If you\u2019ve been craving a delicious, healthy Thai Green Curry with Spring Vegetables, you\u2019ve come to the right place, \u2018cause this recipe looks amazing and we can\u2019t wait to get stuck in.<\/p>\n\n\n\n<p>Take a peek at this easy-to-make recipe from<a href=\"https:\/\/cookieandkate.com\/thai-green-curry-with-spring-vegetables\/\"><em> Cookie + Kate<\/em><\/a><em>:<\/em><\/p>\n\n\n\n<p>Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 cup brown basmati rice, rinsed.<\/li><li>2 teaspoons coconut oil or olive oil.<\/li><li>1 small white onion, diced.<\/li><li>1 tablespoon finely chopped fresh ginger (about a 1-inch nub of ginger, peeled and chopped).<\/li><li>2 cloves garlic, finely chopped.<\/li><li>Pinch of salt.<\/li><li>\u00bd bunch asparagus, tough ends removed and sliced into 2-inch long pieces (to yield about 2 cups prepared asparagus).<\/li><li>3 carrots, peeled and sliced on the diagonal into \u00bc-inch wide rounds (to yield about 1 cup sliced carrots).<\/li><li>2 tablespoons <a href=\"https:\/\/www.amazon.com\/gp\/product\/B000SRMB16\/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B000SRMB16&amp;linkCode=as2&amp;tag=cooandkatingr-20&amp;linkId=F27QYAX6UQO25IBL\">Thai green curry paste<\/a>*.<\/li><li>1 can coconut milk (You can also use full-fat coconut milk for a richer curry).<\/li><li>\u00bd cup water.<\/li><li>1 \u00bd teaspoons coconut sugar or turbinado (raw) sugar or brown sugar.<\/li><li>2 cups packed baby spinach, roughly chopped.<\/li><li>1 \u00bd teaspoons rice vinegar or fresh lime juice.<\/li><li>1 \u00bd teaspoons soy sauce** (or reduced-sodium tamari).<\/li><li>Garnishes: handful of chopped fresh cilantro and red pepper flakes, to taste.<\/li><\/ul>\n\n\n\n<iframe loading=\"lazy\" src=\"https:\/\/open.spotify.com\/embed-podcast\/show\/7atRdaOsvf4N7bZxMQxgrn\" width=\"100%\" height=\"232\" frameborder=\"0\" allowtransparency=\"true\" allow=\"encrypted-media\"><\/iframe>\n\n\n\n\n\n<p><\/p>\n\n\n\n<p>Method:<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>To cook the rice, bring a large pot of water to boil. Add the rinsed rice and continue boiling for 30 minutes, reducing heat as necessary to prevent overflow. Remove from heat, drain the rice and return the rice to the pot. Cover and let the rice rest for 10 minutes or longer, until you\u2019re ready to serve.<\/li><li>Warm a large skillet with deep sides over medium heat. Once it\u2019s hot, add a couple teaspoons of oil. Cook the onion, ginger and garlic with a sprinkle of salt for about 5 minutes, stirring often. Add the asparagus and carrots and cook for 3 more minutes, stirring occasionally. Then add the curry paste and cook, stirring often, for 2 minutes.<\/li><li>Pour the coconut milk into the pan, along with \u00bd cup water and 1 \u00bd teaspoons sugar. Bring the mixture to a simmer. Reduce heat as necessary to maintain a gentle simmer and cook until the carrots and asparagus are tender and cooked through. This should take around 5 to 10 minutes.<\/li><li>Once the vegetables are done cooking, stir the spinach into the mixture and cook until the spinach has wilted, about 30 seconds. Remove the curry from heat and season with rice vinegar and soy sauce. Add salt and red pepper flakes (optional), to taste.
