{"id":43480,"date":"2020-12-08T08:40:14","date_gmt":"2020-12-07T21:40:14","guid":{"rendered":"https:\/\/cms.smooth.com.au\/?p=43480"},"modified":"2020-12-08T08:26:37","modified_gmt":"2020-12-07T21:26:37","slug":"mike-perso-is-a-huge-fan-of-nigella-lawsons-ultimate-christmas-pudding","status":"publish","type":"post","link":"https:\/\/cms.smooth.com.au\/lifestyle\/recipes\/mike-perso-is-a-huge-fan-of-nigella-lawsons-ultimate-christmas-pudding\/","title":{"rendered":"Mike Perso Is A Huge Fan Of Nigella Lawson\u2019s Ultimate Christmas Pudding"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">Christmas is just around the corner and we cannot wait for all the cooking and all the eating to come.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But if you\u2019re struggling to come up with the perfect dessert to cook this festive season, Mike Perso from <em>The More Music Breakfast Show with Mike Perso and Jennifer Hansen <\/em>has got you covered.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">*Drumroll*&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nigella Lawson\u2019s <a href=\"https:\/\/www.nigella.com\/recipes\/ultimate-christmas-pudding\" target=\"_blank\" aria-label=\"undefined (opens in a new tab)\" rel=\"noreferrer noopener\">\u2018Ultimate Christmas Pudding\u2019<\/a> as featured in <a href=\"https:\/\/www.nigella.com\/books\/nigella-christmas\" target=\"_blank\" aria-label=\"undefined (opens in a new tab)\" rel=\"noreferrer noopener\"><em>Nigella Christmas.<\/em><\/a><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mike shared this recipe find with the lovely people of Melbourne this morning, and if you didn\u2019t get a chance to jot down all deets, you can check the full recipe out below:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1\u00bc cups currants<\/li><li>1 cup golden raisins<\/li><li>1 cup roughly chopped pitted prunes<\/li><li>\u00be cup Pedro Ximenez sherry<\/li><li>\u2154 cup all-purpose flour<\/li><li>2\u2153 cups fresh breadcrumbs<\/li><li>14 tablespoons coarsely grated vegetable shortening (freeze overnight to make it easier to grate)<\/li><li>\u00be cup dark brown sugar<\/li><li>1 teaspoon ground cinnamon<\/li><li>\u00bc teaspoon ground cloves<\/li><li>1 teaspoon baking powder<\/li><li>grated zest of 1 lemon<\/li><li>3 large eggs<\/li><li>1 medium apple (peeled and grated)<\/li><li>2 tablespoons honey<\/li><li>\u00bd cup vodka (to flame the pudding)<\/li><li>1.7 litre heatproof plastic pudding basin with a lid<\/li><li>\u00a0A sprig of holly to decorate.<\/li><\/ul>\n\n\n\n<iframe loading=\"lazy\" src=\"https:\/\/open.spotify.com\/embed-podcast\/show\/7atRdaOsvf4N7bZxMQxgrn\" width=\"100%\" height=\"232\" frameborder=\"0\" allowtransparency=\"true\" allow=\"encrypted-media\"><\/iframe>\n\n\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Instructions:\u00a0<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Put the currants, golden raisins and scissored pitted prunes into a bowl with the Pedro Xim\u00e9nez, swill the bowl a bit, then cover with cling wrap and leave to steep overnight or for up to 1 week.<\/li><li>When the fruits have had their steeping time, put a large pan of water on to boil, or heat some water in a conventional steamer, and butter your heatproof plastic pudding basin (or basins), remembering to grease the lid, too.<\/li><li>In a large mixing bowl, combine all the remaining pudding ingredients (except the vodka).<\/li><li>Add the steeped fruits, scraping in every last drop of liquor with a rubber spatula, and mix to combine thoroughly, then fold in cola-cleaned coins or heirloom charms. If you are at all frightened about choking-induced fatalities at the table, you can leave the coins and charms out.<\/li><li>Scrape and press the mixture into the prepared pudding basin, squish it down and put on the lid. Then wrap with a layer of foil so that the basin is watertight, then either put the basin in the pan of boiling water (to come halfway up the basin) or in the top of a lidded steamer and steam for 5 hours, checking every now and again that the water hasn\u2019t bubbled away.<\/li><li>When it\u2019s had its 5 hours, remove cautiously (you don\u2019t want to burn yourself) and, when manageable, unwrap the foil, and put the pudding in its basin somewhere out of the way in the kitchen or, if you\u2019re lucky enough, the pantry until Christmas Day.<\/li><li>On the big day, rewrap the pudding (still in its basin) in foil and steam again, this time for 3 hours.\u00a0<\/li><li>To serve, remove from the pan or steamer, take off the lid, put a plate on top, turn it upside down and give the plastic basin a little squeeze to help unmould the pudding. Then remove the basin.<\/li><li>Put the sprig of holly on top of the pudding, then heat the vodka in a small pan and the minute it\u2019s hot, but before it boils \u2013 you don\u2019t want the alcohol to burn off before you attempt to flamb\u00e9 it \u2013 turn off the heat, strike a match, stand back and light the pan of vodka, then pour the flaming vodka over the pudding and take it as fast as you safely can to your guests. If it feels less dangerous to you, pour the hot vodka over the pudding and then light the pudding.
