{"id":60481,"date":"2022-05-09T09:41:04","date_gmt":"2022-05-08T23:41:04","guid":{"rendered":"https:\/\/cms.smooth.com.au\/?p=60481"},"modified":"2022-05-09T09:42:52","modified_gmt":"2022-05-08T23:42:52","slug":"warm-yourself-up-with-this-recipe-for-braised-beef-cheeks-and-salsa-verde","status":"publish","type":"post","link":"https:\/\/cms.smooth.com.au\/lifestyle\/recipes\/warm-yourself-up-with-this-recipe-for-braised-beef-cheeks-and-salsa-verde\/","title":{"rendered":"Warm Yourself Up With This Recipe For Braised Beef Cheeks And Salsa Verde"},"content":{"rendered":"\n<p>The cooler days and nights are fast approaching which means it\u2019s time to ditch the summer wardrobe and update our winter repertoire of <a href=\"https:\/\/cms.smooth.com.au\/lifestyle\/food-drink\/this-smashed-avo-hash-brown-recipe-will-score-you-extra-brownie-points-with-mum\/\" target=\"_blank\" aria-label=\"undefined (opens in a new tab)\" rel=\"noreferrer noopener\">recipes.&nbsp;<\/a><\/p>\n\n\n\n<p>And you\u2019re in luck, \u2018cause <a href=\"https:\/\/cms.smooth.com.au\/lifestyle\/recipes\/persos-prawn-party-recipes-panko-prawns-and-prawn-saganaki\/\" target=\"_blank\" aria-label=\"undefined (opens in a new tab)\" rel=\"noreferrer noopener\">Mike Perso<\/a> from <em>The More Music Breakfast Show <\/em>has trialled this braised beef cheeks with salsa verde recipe from <a href=\"https:\/\/www.delicious.com.au\/recipes\/braised-beef-cheeks-salsa-verde\/e121324d-0a7b-424a-8db0-bd619e24f219\" target=\"_blank\" aria-label=\"undefined (opens in a new tab)\" rel=\"noreferrer noopener\"><em>Delicious<\/em><\/a> and it\u2019s a winner.<\/p>\n\n\n\n<p>Here\u2019s everything you\u2019ll need to know about the ultimate comfort food:<\/p>\n\n\n\n<p><strong>Serves:<\/strong> 6<\/p>\n\n\n\n<p><strong>Prep Time: <\/strong>10 minutes<\/p>\n\n\n\n<p><strong>Cook Time:<\/strong> 5 hours<\/p>\n\n\n\n<p><strong>Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>750ml bottle red wine<\/li><li>2 tbsp olive oil<\/li><li>6 beef cheeks, trimmed<\/li><li>2 tbsp plain flour, seasoned, to dust<\/li><li>2 onions, chopped<\/li><li>4 garlic cloves, chopped<\/li><li>2L (8 cups) good-quality beef stock<\/li><li>2 bay leaves<\/li><li>Mashed potato, to serve<\/li><\/ul>\n\n\n\n<p><strong>Salsa Verde<\/strong>:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1\/3 cup (80ml) extra virgin olive oil<\/li><li>2 cups flat-leaf parsley leaves<\/li><li>1 cup basil leaves<\/li><li>1\/2 cup mint leaves<\/li><li>2 tbsp each Dijon mustard, red wine vinegar and rinsed, salted capers<\/li><li>2 anchovy fillets (optional)<\/li><\/ul>\n\n\n\n<p><strong>Instructions:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat the oven to 170\u00b0C. Place the wine in a pan and simmer over medium heat for 10 minutes or until reduced by half. Set aside.&nbsp;<\/li><li>Heat oil in a large flameproof casserole over medium-high heat. Dust beef in flour, shaking off excess.&nbsp;<\/li><li>Brown beef, in batches, for 2 minutes each side, adding more oil if necessary. Remove and set aside.<\/li><li>Add the onion to the pan, reduce heat to medium and cook, stirring, for 5 minutes or until softened. Stir in garlic, then return beef to pan.<\/li><li>Add reduced wine, stock and bay leaves, then season. The meat should be completely covered with liquid, so top up with water if necessary. Cover and cook in the oven for 2 1\/2 hours or until the beef is meltingly tender.<\/li><li>Meanwhile, to make the salsa verde, place the ingredients in a blender and blend to form a smooth paste. Season to taste \u2013 remember anchovies and capers are already salty.<\/li><li>Transfer beef to a plate, then cover with foil to keep warm.
