{"id":60752,"date":"2022-05-16T10:36:21","date_gmt":"2022-05-16T00:36:21","guid":{"rendered":"https:\/\/cms.smooth.com.au\/?p=60752"},"modified":"2022-05-16T10:36:25","modified_gmt":"2022-05-16T00:36:25","slug":"this-slow-cooked-mexican-chicken-soup-recipe-is-the-perfect-winter-staple","status":"publish","type":"post","link":"https:\/\/cms.smooth.com.au\/lifestyle\/food-drink\/this-slow-cooked-mexican-chicken-soup-recipe-is-the-perfect-winter-staple\/","title":{"rendered":"This Slow Cooked Mexican Chicken Soup Recipe Is The Perfect Winter Staple"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">As much as we wish we could soak up the warm Aussie weather all year round, winter is fast approaching.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">So, what better way to <a href=\"https:\/\/cms.smooth.com.au\/lifestyle\/recipes\/warm-yourself-up-with-this-recipe-for-braised-beef-cheeks-and-salsa-verde\/\" target=\"_blank\" aria-label=\"undefined (opens in a new tab)\" rel=\"noreferrer noopener\">warm yourself<\/a> up than with a hearty Slow Cooked Mexican Chicken Soup, created by the masterminds &#8211; *cough Nagi* from <a href=\"https:\/\/recipetineats.com\/slow-cooker-mexican-chicken-soup\/#wprm-recipe-container-26555\">Recipe Tin Eat\u2019s<\/a>?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Here\u2019s everything you need to know about the recipe &#8211; which also happens to taste like chicken enchiladas &#8211;\u00a0 in case you needed an extra reason to whip it up:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Serves: <\/strong>7-8<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Prep Time: <\/strong>10 minutes<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cook Time: <\/strong>8 hours<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 tbsp olive oil<\/li><li>1 onion, diced (brown, white or yellow)<\/li><li>1 red capsicum\/bell pepper, large, diced<\/li><li>3 cloves garlic, minced<\/li><li>3 cups (750ml) chicken broth\/stock, low sodium<\/li><li>800g canned black beans, drained<strong>*<\/strong><\/li><li>800g canned corn, drained (2 cans, or 500g frozen\/ fresh corn)<\/li><li>800g crushed canned tomato or 700g tomato passata<\/li><li>500g chicken breast<\/li><\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Spices:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 tbsp dried oregano<\/li><li>2 tsp cumin powder<\/li><li>2 tsp paprika powder<\/li><li>1 tsp each onion powder and garlic powder (or 2 tsp of one of them)<\/li><li>1 tsp cayenne pepper (optional, adjust spiciness)<\/li><li>1 tsp each salt + black pepper<\/li><\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Toppings:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Shredded cheese (recommended)<\/li><li>Sour cream or yogurt (recommended)<\/li><li>Coriander\/cilantro (recommended)<\/li><li>Lime wedges (recommended)<\/li><li>Avocado, diced<\/li><li>Corn chips or tortillas, for dunking<\/li><\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Instructions:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Heat the oil over medium heat in a large skillet and saut\u00e9 the onion, capsicum\/bell pepper and garlic for 5 minutes until translucent.<\/li><li>Add a splash of chicken broth, bring to simmer then tip it all into the slow cooker. (Instant Pot: Do Step 1 &amp; 2 on saute function).<\/li><li>Add remaining chicken broth, spices, corn, bean and tomato. Give it a good stir, then add chicken and push down to submerge.<\/li><li>Slow cook for 6 to 8 hours on low. (Or pressure cooker 25 minutes on high<strong>**<\/strong>).<\/li><li>Remove chicken onto plate, shred with 2 forks. Return to the slow cooker, give it a good stir. Check if it needs more salt or pepper.<\/li><li>Ladle into bowls and serve with toppings of choice.&nbsp;<\/li><\/ol>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>*<\/strong>You can use red kidney beans instead of black beans or 1\/2 cup of dried beans.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>**<\/strong>Simmer on stove for 40 min on medium low, remove chicken and shred.
