It\u2019s fish pie.\u00a0<\/p>\n\n\n\n<p>While many may shirk at the idea of a fish pie, those who\u2019ve tasted the morsel from the Builders Arms Hotel know it\u2019s a plate scraper of the highest degree.<\/p>\n\n\n\n<p>So, if you\u2019re a fan of chef Andrew McConnell and his signature pie, you\u2019re in luck \u2018cause <a href=\"https:\/\/www.broadsheet.com.au\/melbourne\/food-and-drink\/article\/broadsheet-cookbook-builders-arms-hotels-fish-pie-ocean-trout-prawns-rockling-and-sorrel\" target=\"_blank\" aria-label=\"undefined (opens in a new tab)\" rel=\"noreferrer noopener\"><em>Broadsheet<\/em><\/a> has blessed us with the recipe in an extract from <em>The Broadsheet Melbourne Cookbook.<\/em><\/p>\n\n\n\n<p>And if you need an A+ review to get you over the line, The More Music Breakfast Show\u2019s Mike Perso whipped up the fish pie recipe over the weekend and certifies it\u2019s still a winner at home.<\/p>\n\n\n\n<p>Here\u2019s everything you need to know about the pub dish:<\/p>\n\n\n\n<p><strong>Serves:<\/strong> 6<\/p>\n\n\n\n<p><strong>Prep time:<\/strong>&nbsp; 25 minutes<\/p>\n\n\n\n<p><strong>Cook time:<\/strong> 90 minutes<\/p>\n\n\n\n<p><strong>Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 packet puff pastry (or enough to cover your chosen dishware)<\/li><li>300g ocean trout fillet, skin removed, cut into 6cm-long pieces<\/li><li>950g rockling fillet, skin removed, cut into 6cm-long pieces<\/li><li>6 large prawns, peeled and halved<\/li><li>12 large sorrel leaves, torn<\/li><li>\u00bd cup chopped dill<\/li><li>Zest of 1 lemon<\/li><li>3 tbsp capers, chopped<\/li><li>1 egg, beaten<\/li><\/ul>\n\n\n\n<p><strong>Sauce:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>3 tbsp olive oil<\/li><li>3 brown onions, finely sliced<\/li><li>1 large fennel bulb, cored and finely sliced<\/li><li>6 prawn heads<\/li><li>180ml white wine<\/li><li>300g potatoes, peeled and sliced<\/li><li>625ml chicken stock<\/li><li>185ml thickened cream<\/li><li>Salt flakes<\/li><li>Freshly ground black pepper<\/li><\/ul>\n\n\n\n<p><strong>Instructions:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat the oven to 190\u00b0C.<\/li><li>For the sauce, heat the oil in a large, heavy-based saucepan and gently cook the onion, garlic and fennel until soft, about 5\u20136 minutes.&nbsp;<\/li><li>Add the prawn heads and cook until pink, about 3\u20134 minutes.<\/li><li>Increase the heat, deglaze the pan with the wine and simmer for 3\u20134 minutes until almost totally reduced.&nbsp;<\/li><li>Add the potatoes and stock and simmer gently until the potatoes are tender and the stock has reduced by two-thirds, about 15\u201320 minutes.<\/li><li>Add the cream, bring the mixture to the boil and turn off the heat. Remove the prawn heads.<\/li><li>Tip the mix into a blender and puree until smooth. Strain the sauce and season to taste.<\/li><li>Cut shapes out of the puff pastry to top the pies with (6 x 500ml ramekins work well for this). Be sure to cut the pastry about 1cm wider than the dish all the way around.<\/li><li>Divide the seafood, herbs, lemon zest and capers between the pie dishes. Spoon about 200ml of the sauce into each dish and stir to distribute.<\/li><li>Dampen the edges of the bowls with a little water and place the pastry lids on top.&nbsp;<\/li><li>Press the pastry lightly onto the dishes and brush with a little beaten egg.<\/li><li>Pierce a couple of holes through the top of each pie (to let the steam escape while cooking) and bake for 15\u201320 minutes until the pastry is golden and the fish is cooked.<\/li><\/ol>\n\n\n\n<p>Enjoy!<\/p>\n\n\n\n<p><em>Image: Pexels<\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>You know it\u2019s going to be a good day when one of your favourite food establishments drops a famous recipe.
